Ayinger Altbairisch Dunkel I think Augustiner needs at least a little Munich 10, probably a good amount, and maybe no Pilsner, but that is the unicorn of Dunkels. I think they call it "dark" which is "dunkel" but whatevs) in Munich. There is a big, round malt palate that ends with a hint of coffee and hops. 5.0% abv 21 ibu . The recipe is said to "closely mimic" Altbairisch. Pours clear, dark tan in color with one half inch head. I'm not really sure what this does to my wort sugar profile. In the other thread Denny mentioned a certain published recipe that he used. I think it's really important to cut the munich with some pilsner - that's just the sense I got while drinking the beer. Though I'm not certain, the recipe in the linked document seems to have been helped by information from the then brewmaster at Ayinger, "Iwan, Jans Jurgen", of course recipes change over time and some breweries do tend towards disinformation (don't know that's the case here) while others are just straightforward. Altbairisch Dunkel Don't know the age on the bottle but I bet this is awesome fresh. Impenetrably dark with a golden-brown gleam when held up to the light, and with a warm aroma and malty taste, while summoning up coffee taste sensations on going down.
